Cranberry Coconut Fruit Balls Recipe

Ingredients

  • Serving Size : 1
  • 12 ounces dried apricots
  • 1 1/2 cups pecans
  • 2 cups fresh cranberries – rinsed and drained
  • grated orange peel – from 1 orange
  • 1/4 cup butter
  • 1 pound confectioner’s sugar
  • 13 1/2 ounces graham cracker crumbs
  • 7 ounces coconut flakes
  • red food coloring
  • green food coloring

Method

  1. Coarsely grind apricots with pecans and cranberries.
  2. Stir in orange rind, butter, sugar and crumbs.
  3. Wrap and chill for 2 hours.
  4. Shape mixture into 3/4 inch balls.
  5. Roll balls in coconut.
  6. Tint coconut red and green by using a =few drops of food coloring and rubbing each color into coconut.
  7. Store in refrigerator until ready to serve.
  8. Yield: makes 100 = 3/4 inch balls.
