Cornmeal-Crusted Fried Green Tomatoes Recipe

Ingredients

Makes 4 servings

  • 1/2 cup yellow cornmeal
  • 1/2 teaspoon Cajun seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 3 or 4 firm green tomatoes, cut into 1/2-inch slices
  • canola or grapeseed oil, for frying

Method

  1. In a shallow bowl, combine the cornmeal, Cajun seasoning, salt and pepper
  2. Dredge the tomato slices in the cornmeal mixture, turning to coat both sides
  3. In a large skillet, heat a thin layer of oil over medium-high heat
  4. Add the tomato slices and cook until golden brown on both sides, turning once, about 8 minutes total
  5. Serve immediately
