Ingredients
Makes 4 servings
- 1/2 cup yellow cornmeal
- 1/2 teaspoon Cajun seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 3 or 4 firm green tomatoes, cut into 1/2-inch slices
- canola or grapeseed oil, for frying
Method
- In a shallow bowl, combine the cornmeal, Cajun seasoning, salt and pepper
- Dredge the tomato slices in the cornmeal mixture, turning to coat both sides
- In a large skillet, heat a thin layer of oil over medium-high heat
- Add the tomato slices and cook until golden brown on both sides, turning once, about 8 minutes total
- Serve immediately
