Ingredients
Makes about 3 cups
- 1 tablespoon olive oil
- 1 medium red onion, chopped
- 1/2 cup minced red bell pepper
- 2 cups fresh or frozen corn kernels
- 1/2 teaspoon sugar
- 2 tablespoons fresh lime juice 2 tablespoons minced fresh cilantro
- salt and freshly ground black pepper
Method
- In a large skillet, heat the oil over medium heat
- Add the onion and bell pepper and cook for 5minutes
- Stir in the corn and sugar and remove from the heat
- Cool completely, then transfer to a bowl and stir in the lime juice, cilantro and salt and black pepper to taste
- If not using right away, cover and refrigerate until needed
- Properly stored, this relish will keep for 2 to 3 days
