Corn Red Bean Salad Recipe

Ingredients

Makes 4 servings

  • 1 (10-ounce) package frozen corn kernels, cooked
  • 1 1/2 cups cooked or 1 can dark red kidney beans, drained and rinsed
  • 1 celery rib, cut into 1/4-inch slices
  • 2 green onions, minced
  • 2 tablespoons chopped fresh cilantro or parsley
  • 1/4 cup olive oil
  • 2 tablespoons white wine vinegar
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper

Method

  1. In a large bowl, combine the corn, beans, celery, green onions and cilantro and set aside
  2. In a small bowl, combine the oil, vinegar, cumin, sugar, salt and pepper
  3. Mix well and pour the dressing over the vegetables
  4. Toss gently to combine and serve
