Corn Red Bean Salad Recipe
Ingredients
Makes 4 servings
- 1 (10-ounce) package frozen corn kernels, cooked
- 1 1/2 cups cooked or 1 can dark red kidney beans, drained and rinsed
- 1 celery rib, cut into 1/4-inch slices
- 2 green onions, minced
- 2 tablespoons chopped fresh cilantro or parsley
- 1/4 cup olive oil
- 2 tablespoons white wine vinegar
- 1/2 teaspoon ground cumin
- 1/4 teaspoon sugar
- 1/2 teaspoon salt
- 1/8 teaspoon freshly ground black pepper
Method
- In a large bowl, combine the corn, beans, celery, green onions and cilantro and set aside
- In a small bowl, combine the oil, vinegar, cumin, sugar, salt and pepper
- Mix well and pour the dressing over the vegetables
- Toss gently to combine and serve
