Corn Fritters Recipe

Ingredients

Makes 4 servings

  • 1/2 cup all-purpose flour
  • 1/2 cup yellow cornmeal
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • pinch sugar
  • 1/2 cup plain soy milk
  • 2 cups fresh or thawed frozen corn kernels Canola or grapeseed oil, for frying

Method

  1. Preheat the oven to 250°F
  2. In a large mixing bowl, combine the flour, cornmeal, baking powder, salt and sugar
  3. Stir in the soy milk, then add the corn kernels and stir to combine
  4. In a large skillet, heat a thin layer of oil over medium heat
  5. Drop the batter by the tablespoonful into the skillet and fry until golden brown, turning once, 2 to 3 minutes per side
  6. Transfer cooked fritters to a heat-proof platter and keep warm in the oven while you cook the rest
  7. Serve immediately
