Coriander-Sunflower Seed Flatbread Recipe

Ingredients

Makes 4 flatbreads

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • ¾ cup water
  • olive oil, as needed
  • 1 1/2 teaspoons ground coriander
  • 1/2 cup unsalted sunflower seeds

Method

  1. In a large bowl, combine the flour and salt and stir in as much of the water as needed until the dough holds together
  2. Knead until smooth, about 5 minutes
  3. Cover with plastic wrap and set aside for 15 minutes
  4. Preheat the oven to 250°F
  5. Divide the dough into 4 equal pieces
  6. Lightly flour your hands and shape the pieces into balls
  7. Flatten them on a lightly floured work surface, then roll out into circles about 1/4 inch thick
  8. Brush the top surface of the dough circles with olive oil, then sprinkle them with coriander and sunflower seeds, using your fingers to rub in the spice and seeds so they adhere to the dough
  9. In a large skillet, heat a thin layer of oil over medium-high heat
  10. Place one of the dough circles in the skillet and cook, turning once, until brown spots begin to appear, about 3 minutes per side
  11. Remove the cooked bread to a heat-proof platter, cover with foil and keep warm while you cook the remaining flatbreads
  12. Repeat with the remaining dough and serve at once
