Copper Carrot Pennies Recipe

Ingredients

  • Serving Size : 1
  • 1 1/2 pounds carrots
  • 1 medium onion
  • 1 teaspoon salt

Method

  1. Cook carrots in salty water until tender.
  2. Drain and cool.
  3. Slice onion and set aside.
  4. SAUCE: 1 Can tomato soup 1/2 Cup salad oil 3/4 Cup vinegar 2/3 Cup sugar 1 tsp Worcestershire sauce 1 tsp salt Pepper
  5. Blend sauce and pour over carrots.
  6. Add onions.
  7. Refrigerate.
  8. Keeps 2 – 3 weeks.
