Sweet Spiced Quinoa

  • 1 cup uncooked quinoa
  • 2 cups water
  • 1 teaspoon cumin
  • heaped 1/4 teaspoon ground cinnamon.
  • 2 carrots, grated, or 1 cup matchstick carrots
  • 1/2 cup canned chickpeas, rinsed and drained
  • 1/3 cup raisins
  • 1/3 cup slivered almonds
  • 1 tightly packed cup chopped fresh cilantro or parsley
  • 2 tablespoons olive oil
  • juice of 1/2 lemon
  • 11/2 teaspoons honey
  • garnish: sliced green onions

Method

  1. Cook the quinoa with the water according to the instructions given on the package, but add cumin and cinnamon so the quinoa cooks with the spices
  2. Once the quinoa has finished cooking, fluff it with a fork, then fold in the carrots, chickpeas, raisins, almonds, and cilantro
  3. In a small bowl, whisk together the olive oil, lemon juice, and honey, then drizzle the mixture over the quinoa
  4. Mix to combine, garnish, and enjoy
