Coconut Spiced Cabbage With Mustard Seeds Indian Recipe

Ingredients

  • recipe for : Cabbage Thoran
  • 1 teaspoon safflower or other neutral oil
  • 1 teaspoon black mustard seeds
  • 1 hot green chile, finely chopped (remove seeds to reduce heat)
  • 1/2 cup finely chopped red onion or shallots
  • 10 curry leaves
  • 1/2 teaspoon ground turmeric
  • 3 cups packed finely chopped green cabbage (1/2 medium head)
  • 1/2 cup shredded coconut (fresh, or thawed if frozen, or dried)
  • 1 teaspoon salt, or to taste

Method

  1. Heat the oil in a large skillet over medium heat
  2. When hot, add the mustard seeds and let them start to pop, about 1 minute
  3. Add the chile, onion, and curry leaves
  4. Cook, stirring, until golden, about 6 minutes
  5. Add the turmeric and cabbage, and mix well
  6. Cover and cook for 15 minutes
  7. Stir once halfway through
  8. Add 1 tablespoon of water to deglaze if needed, and reduce heat to medium-low if the cabbage sticks too much
  9. Add the coconut and salt, and mix well
  10. Reduce heat to medium-low
  11. Add 1 tablespoon of water to deglaze if needed
  12. Cover and cook until cabbage is cooked through, 10 minutes
  13. Stir and cook uncovered for a few minutes if too wet
  14. Taste, and adjust salt and spice
  15. Serve hot
