Hot Rice and Oatmeal with Dried Fruit and Coconut Pressure Cooker
Ingredients
SERVES 4 to 6 – Cooker: 5- to 7-quart – Time: 7 minutes at HIGH pressure
- 1 cup old-fashioned or thick-cut rolled oats
- 2/3 cup short- or long-grain brown rice, soaked 4 hours or overnight in water to cover and drained
- 2 tablespoons oat bran or toasted wheat germ
- ½ teaspoon apple pie spice or ground cinnamon with a pinch of cloves, nutmeg, and allspice added
- pinch sea salt.
- 5 cups water
- ½ cup golden raisins or dried cherries, blueberries, or cranberries
- ¼ cup chopped dried pitted prunes
- ¼ cup chopped dried apricots
- 1 tablespoon butter
- 2/3 cup shredded sweetened coconut, for serving
- milk, half-and-half, almond milk, coconut milk, or rice milk, for serving.
Method
- In a 5- to 7-quart pressure cooker, combine the oats, rice, oat bran, spice, salt, and water
- Stir in the dried fruit and butter
- Close and lock the lid
- Place a heat diffuser on the burner and the pressure cooker on the diffuser
- Set the burner heat to high
- When the cooker reaches HIGH pressure, reduce the burner heat as low as you can and still maintain HIGH pressure
- Set a timer to cook for 10 minutes
- Remove the pot from the heat
- Open the cooker with the Natural Release method; let stand for 20 minutes
- At time, if the pressure is not all released, open the valve
- Stir well and scoop into serving bowls
- Sprinkle each serving with the coconut
- Serve with a few splashes of the milk of your choice
