Ingredients

- 3 cups sifted flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 cup sugar
- 2 Eggs – well beaten
- 1 cup heavy cream
- 3/4 cup Baker’s Coconut – Premium shred
Method
- Sift flour once, measure, add baking powder and salt, and sift again.
- Add sugar gradually to eggs.
- Add flour alternately with cream, mixing well.
- Add coconut.
- Chill.
- Roll 1/4 inch thick on slightly floured board.
- Dredge with sugar.
- Cut with large round cutter.
- Bake in hot oven (425 degrees) 13 to 15 minutes.
- Makes 2 dozen 3 1/2″ jumbles.
