Coconut Cream Jumbles Recipe

Ingredients

  • Serving Size : 1
  • 3 cups sifted flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup sugar
  • 2 Eggs – well beaten
  • 1 cup heavy cream
  • 3/4 cup Baker’s Coconut – Premium shred

Method

  1. Sift flour once, measure, add baking powder and salt, and sift again.
  2. Add sugar gradually to eggs.
  3. Add flour alternately with cream, mixing well.
  4. Add coconut.
  5. Chill.
  6. Roll 1/4 inch thick on slightly floured board.
  7. Dredge with sugar.
  8. Cut with large round cutter.
  9. Bake in hot oven (425 degrees) 13 to 15 minutes.
  10. Makes 2 dozen 3 1/2″ jumbles.
