Classic Beef Barley Stew Slow Cooker Recipe

Ingredients

  • 2 tbsps (28 ml) olive oil
  • 1½ pounds (680 g) beef round steak, cubed
  • 1½ cups (240 g) diced onion
  • ½ cup (75 g) chopped green bell pepper
  • 1 can (28 ounces, or 785 g) no-salt-added diced tomatoes
  • ½ cup (120 g) low-salt ketchup
  • 2/3 cup (133 g) pearl barley
  • ½ teaspoon pepper
  • 1 tbsp (7 g) paprika
  • 280g frozen lima beans
  • 700 ml water
  • 1 cup (230 g) sour cream

Method

  1. Heat oil in a skillet over medium-high heat
  2. Brown beef cubes and then add onion and green pepper
  3. Saute until vegetable begin to soften
  4. Pour into slow cooker
  5. Add remaining ingredients except sour cream
  6. Cover and cook on high 5 hours
  7. Stir in sour cream before serving
  8. Yield: 8 servings
  9. Per serving: 340 g water; 318 calories (29% from fat, 32% from protein, 38% from carb)
