Classic Bechamel Sauce Recipe

Ingredients

  • 1 tbsp. butter or vegetable oil
  • 1 tbsp. white flour
  • 1 cup very cold milk
  • salt and pepper.

Method

  1. Heat butter in pan until it bubbles, or oil until it smokes lightly
  2. Add flour and stir vigorously, until well mixed and roux is fragrant, about 2-3 minutes
  3. Remove from heat
  4. Pour, all at once, the cold milk over the flour mixture
  5. Stir quickly or whisk
  6. Return to medium-low heat and stir continuously until thickened, about 5-8 minutes
  7. Season to taste
  8. If you want a slightly thicker sauce, add more flour
  9. If it’s too thick, add warm milk
  10. It’s easier to thin this sauce than to make it thicker
