Ingredients
Yield : 4 cups
- 28 oz can peeled tomatoes (no sugar added), roughly chopped
- 1 Tbsp red wine vinegar
- 1/4 cup olive oil
- 1/2 tsp black pepper
- 1 medium onion, chopped fine
- 1 tsp minced fresh garlic
- 1 tsp dried basil
- 1 – 2 tsp dried oregano
- 1 tsp salt
Method
- Combine the ingredients reserving half the chopped tomatoes
- Simmer the sauce, whisking occasionally until it has reduced a little, 30-40 minutes
- Stir in the remaining tomato and cook another 30 minutes
- Taste and adjust seasoning if necessary
