Christmas Crawfish Stuffing Recipe

Ingredients

  • Serving Size : 6
  • 1 8 ounce pk cornbread stuffing mix
  • 1/4 pound butter
  • 1 cup celery – chopped
  • 1/2 cup bell pepper – chopped
  • 1/3 cup white onion – chopped
  • 1 pound crawfish – chop coarse
  • 1 teaspoon salt
  • 2 teaspoon Prudhomme’s seafood magic – or
  • creole seasoning
  • 1/2 cup green onion – chopped
  • 1 can water chestnuts – sliced
  • 1 cup water

Method

  1. Melt butter and saute celery, bell pepper and onion until limp.
  2. Add the crawfish tails, sprinkle with salt and Seafood Magic.
  3. Saute for 5 minutes.
  4. Add the stuffing, water chestnuts, green onion and water.
  5. Mix well.
  6. Spoon into a buttered dish or turkey cavity.
  7. Bake uncovered at 350- for 25 minutes.
  8. Yields 6 cups.
