Chops With Salsa Criolla Vinaigrette Recipe

Ingredients

For the Salsa Criolla vinaigrette

  • 1 medium red onion, finely sliced in strips
  • 1/4 to 1/2 tablespoon red pepper flakes (optional)
  • 1 teaspoon oregano
  • 4 tablespoons olive oil
  • juice of 3 lemons or 4 limes
  • 1/3 cup finely chopped fresh cilantro
  • sea salt and black pepper

For the salad

  • 5 cups roughly chopped kale
  • 1 cucumber, chopped
  • 20 cherry tomatoes, halved
  • 1/2 cup chopped fresh parsley
  • 1/3 cup crumbled feta or goat cheese
  • 20 Kalamata olives, pitted and halved

Method

  1. Combine all of the vinaigrette ingredients in a mason jar
  2. Gently shake it, then store it in the fridge for at least 1 hour and up to overnight so the flavors meld together
  3. Combine the salad ingredients in a large bowl, drizzle the vinaigrette over the salad, toss the salad and add the desired amount of marinated onions
  4. Repeat
