Chocolate Zucchini Bread
Ingredients

- 3 lg eggs
- 2 cups sugar
- 1 cup oil
- 2 ounces baking chocolate
- 1 teaspoon vanilla
- 2 cups zucchini – grated
- 1 teaspoon cinnamon – or more
- 1/4 teaspoon baking powder
- 1 teaspoon baking soda
- 1 cup chopped nuts – or more
- 3 cups flour
- 1 teaspoon salt
Method
- Beat eggs till yellow.
- Beat in sugar and oil.
- Melt chocolate.
- Stir into egg mixture.
- Sift flour with salt, cinnamon, baking powder and soda.
- Stir into well oiled pans – angel food or 2 9×5 loaf pans.
- Bake 350 for 1 hour 30 minutes (START WITH LESS TIME).
- Cool in pans for 5 to 20 minutes.
- Turn out on rack and cool.
