Ingredients
Chocolate Crust:
- 4 1/2 cups chocolate cookie crumbs
- 1 cup unsalted butter, melted
Chocolate Cheesecake:
- 2 8-ounce pkgs. cream cheese
- 3/4 cups granulated sugar
- 1/4 cup sour cream
- 1 teaspoon vanilla extract
- 2 large eggs
- 6 ounces semisweet chocolate, finely chopped and melted
Chocolate Mousse:
- 1 teaspoon unflavored gelatin
- 1 tablespoon cold water
- 1/2 cup sugar
- 1 cup whipping cream
- 2 tablespoons boiling water
- 1/3 cup cocoa powder
- 1 tablespoon vanilla
Method
- Preheat oven to 350F
- In a medium bowl, combine butter and cookie crumbs
- Press into the bottom and up the sides of a 9 inch springform pan
- Bake for 8 minutes
- Raise temperature to 475F
- In a large mixing bowl, beat together cream cheese, sugar, sour cream and vanilla
- Beat in eggs one at a time until just combined
- Whisk in chocolate and pour into crust
- Place springform pan into a baking pan filled with 1 inch of water
- Bake for 12 minutes, then reduce heat to 350F and bake for an additional 50 to 60 minutes, until top is lightly golden
- Cool completely
- In a small bowl, combine gelatin and cold water and let sit for 2 minutes
- Add boiling water and stir until gelatin is dissolved
- Set aside
- Meanwhile, in a medium mixing bowl, combine sugar and cocoa
- Beat in whipping cream and vanilla until thickened
- Add gelatin until well blended
- Chill for 1 hour
- Spread the mousse over the cooled cheesecake layer
- Garnish suggestion – chocolate shavings and whipped topping
