Chocolate Mousse Cheesecake Recipe

Ingredients

Chocolate Crust:

  • 4 1/2 cups chocolate cookie crumbs
  • 1 cup unsalted butter, melted

Chocolate Cheesecake:

  • 2 8-ounce pkgs. cream cheese
  • 3/4 cups granulated sugar
  • 1/4 cup sour cream
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 6 ounces semisweet chocolate, finely chopped and melted

Chocolate Mousse:

  • 1 teaspoon unflavored gelatin
  • 1 tablespoon cold water
  • 1/2 cup sugar
  • 1 cup whipping cream
  • 2 tablespoons boiling water
  • 1/3 cup cocoa powder
  • 1 tablespoon vanilla

Method

  1. Preheat oven to 350F
  2. In a medium bowl, combine butter and cookie crumbs
  3. Press into the bottom and up the sides of a 9 inch springform pan
  4. Bake for 8 minutes
  5. Raise temperature to 475F
  6. In a large mixing bowl, beat together cream cheese, sugar, sour cream and vanilla
  7. Beat in eggs one at a time until just combined
  8. Whisk in chocolate and pour into crust
  9. Place springform pan into a baking pan filled with 1 inch of water
  10. Bake for 12 minutes, then reduce heat to 350F and bake for an additional 50 to 60 minutes, until top is lightly golden
  11. Cool completely
  12. In a small bowl, combine gelatin and cold water and let sit for 2 minutes
  13. Add boiling water and stir until gelatin is dissolved
  14. Set aside
  15. Meanwhile, in a medium mixing bowl, combine sugar and cocoa
  16. Beat in whipping cream and vanilla until thickened
  17. Add gelatin until well blended
  18. Chill for 1 hour
  19. Spread the mousse over the cooled cheesecake layer
  20. Garnish suggestion – chocolate shavings and whipped topping
