Ingredients
Makes about 3 cups
- 3 cups sugar
- 1 cup plain or vanilla soy milk
- 4 ounces unsweetened chocolate
- 3 tablespoons pure maple syrup
- 1/3 cup vegan margarine
- 1 teaspoon pure vanilla extract
Method
- In a large saucepan, combine the sugar, soy milk, chocolate and maple syrup and bring just to a boil over medium-high heat, stirring frequently
- Reduce the heat to medium and continue to cook until the chocolate is melted, about 5 minutes
- Remove from the heat and add the margarine and vanilla
- Let the mixture cool to room temperature without stirring, 15 minutes
- After the mixture is cooled, beat it until it is creamy and stiff enough for spreading on a cake
- If it becomes too stiff, add a few drops of hot water and beat until creamy
- Store leftovers covered in the refrigerator for 3 to 4 days
