Ingredients
Makes : 2 dozen
- 4 tablespoons coconut butter or oil
- 2/3 cup sugar
- 1 teaspoon vanilla extract
- 2 tablespoons almond or coconut milk
- 1 cup whole wheat flour
- 1/2 cup almond meal
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/3 cup dark chocolate chips
- 1/3 cup walnuts or other nuts, toasted
- 1 pinch of salt
Method
- Put the butter and sugar in the bowl of a mixer and whip until creamy and light
- Add the vanilla and almond milk and mix to combine well
- Stir in the flour then the almond meal, baking soda and baking powder, as well as a pinch of salt
- Fold in the chocolate chip cookies and nuts
- Take spoonfuls of batter and put them on a baking tray lined with baking paper
- Bake the cookies in a preheated oven at 350F for 10-15 minutes
- Let them cool in the pan before transferring into an airtight container
