Ingredients
Servings : 4-6 dishes.
- 4 bananas, mashed
- 2 large carrots, grated
- 1 3/4 cups flour
- 3/4 cup brown sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 3/4 cup cocoa powder
- 1/2 cup coconut oil
- 1 cup coconut milk
- 1 teaspoon vanilla extract
- 1 pinch of salt
Method
- In a bowl, mix the mashed bananas with the grated carrot then stir in the milk and coconut oil and also the vanilla extract
- In another bowl, sift the flour with the cocoa powder, baking powder and baking soda, as well as a pinch of salt
- Combine the dry ingredients with the wet ones and mix well
- Pour the batter into a round cake pan and bake in a preheated oven at 350F for 40-50 minutes
- Let it cool in the pan then transfer to a serving plate and sprinkle over a generous amount of powdered sugar before serving
