Ingredients
Makes about 24 truffles
- 1 cup vegan semisweet chocolate chips
- 1/2 cup almond butter
- 2 tablespoons plain or vanilla soy milk
- 1 tablespoon pure vanilla extract
- 1 cup confectioners sugar
- 2 tablespoons unsweetened cocoa powder
- 1/2 cup finely chopped toasted almonds
Method
- Melt the chocolate in a double boiler or microwave
- In a food processor, combine the almond butter, soy milk and vanilla and blend until smooth
- Add the sugar, cocoa and the melted chocolate and blend until smooth and creamy
- Transfer the mixture to a bowl and refrigerate until chilled, at least 45 minutes
- Roll the chilled mixture into 1-inch balls and place them on an ungreased baking sheet
- Place the ground almonds in a shallow bowl and roll the balls in them, turning to coat
- Place the truffles on a serving platter, refrigerate for 30 minutes and serve
