Chocolate-Almond Butter Truffles Recipe

Ingredients

Makes about 24 truffles

  • 1 cup vegan semisweet chocolate chips
  • 1/2 cup almond butter
  • 2 tablespoons plain or vanilla soy milk
  • 1 tablespoon pure vanilla extract
  • 1 cup confectioners sugar
  • 2 tablespoons unsweetened cocoa powder
  • 1/2 cup finely chopped toasted almonds

Method

  1. Melt the chocolate in a double boiler or microwave
  2. In a food processor, combine the almond butter, soy milk and vanilla and blend until smooth
  3. Add the sugar, cocoa and the melted chocolate and blend until smooth and creamy
  4. Transfer the mixture to a bowl and refrigerate until chilled, at least 45 minutes
  5. Roll the chilled mixture into 1-inch balls and place them on an ungreased baking sheet
  6. Place the ground almonds in a shallow bowl and roll the balls in them, turning to coat
  7. Place the truffles on a serving platter, refrigerate for 30 minutes and serve
