Orange-Coconut Cake

Ingredients

Makes 8 to 10 servings

Cake

  • 3 cups all-purpose flour
  • 1 1/2 cups sugar
  • 1 tablespoon baking soda 1 cup unsweetened coconut milk
  • ¾ cup canola or other neutral oil
  • 1 cup fresh orange juice
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon coconut extract

Frosting

  • 8 ounces vegan cream cheese, softened
  • 1/3 cup vegan margarine, softened
  • 1/4 cup unsweetened coconut milk
  • 2 cups confectioners sugar
  • 2 tablespoons orange zest
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon coconut or orange extract
  • 1 cup sweetened shredded coconut

Method

  1. Make the cake: Preheat the oven to 350°F
  2. Grease a 9 x 13-inch pan and set aside
  3. In a large bowl, sift together the flour, sugar and baking soda
  4. In a separate large bowl, combine the coconut milk, oil, orange juice, lemon juice, vanilla and coconut extract and whisk well to combine
  5. Quickly whisk the wet ingredients into the dry ingredients to combine
  6. Pour the batter into the prepared pan
  7. Bake until a toothpick inserted in the center comes out clean, about 45 minutes
  8. Let the cake cool completely in the pan on a wire rack, about 1 hour
  9. Make the frosting: In a medium bowl, combine the cream cheese, margarine and coconut milk and cream together with an electric mixer
  10. Add 1 cup of the sugar and beat well on low speed to combine
  11. Add the coconut extract, orange zest, vanilla and remaining 1 cup sugar and continue to beat until the mixture is light and fluffy
  12. Spread the frosting on the cooled cake and sprinkle with shredded coconut
