Chive-Flecked Spud Muffins Recipe
Ingredients
Makes 12 muffins
- 1¾ cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup leftover mashed potatoes
- 1/2 cup plain soy milk
- 1/4 cup canola or grapeseed oil
- 2 tablespoons plus 1 teaspoon minced fresh chives
Method
- Preheat the oven to 400°F
- Lightly oil a 12-cup muffin tin or line it with paper liners and set aside
- In a large bowl, combine the flour, baking powder and salt
- In a separate large bowl, combine the mashed potatoes, soy milk, oil and chives, stirring until blended
- Pour the wet ingredients into the dry ingredients and mix until just moistened
- Spoon the batter into the prepared muffin tin
- Bake for 22 to 25 minutes, until golden brown and a toothpick inserted into the center of a muffin comes out clean
- Let the muffins cool about 5 minutes
- Serve warm
