Ingredients
Makes 4 servings
- 2 cups white grape juice
- 2 cups pear nectar
- 1 ripe banana, chopped
- 1 tablespoon fresh lemon juice Pinch salt
- 1/2 cup unsweetened coconut milk (optional)
- 1 cup blueberries
- 1 ripe mango, peeled, pitted and cut into 1/4-inch dice
- 1 cup diced pineapple 1 cup diced strawberries
- fresh mint leaves, for garnish
Method
- In a food processor, combine the grape juice, pear nectar, banana, lemon juice and salt
- Process until smooth, then pour into a large bowl
- Stir in the coconut milk, if using
- Cover and refrigerate until well chilled, for 3 hours or overnight
- Ladle the chilled soup into bowls and spoon 1/4 cup each of the blueberries, mango, pineapple and strawberries into each bowl
- Garnish with mint leaves and serve
