Ingredients
- 2 tbsps (28 ml) olive oil
- 1 cup (160 g) diced onion
- 1 tsp minced garlic
- 1 pound (455 g) extra-lean ground beef
- ½ pound (225 g) ground pork
- 700 ml low-salt chicken broth
- 475 ml water
- 225g diced green chilies
- 2 large potatoes, diced
- 280g frozen corn
- 1 tsp black pepper
- ½ teaspoon oregano
- 1 tsp cumin
Method
- Heat oil in a skillet over medium-high heat and then brown onion, garlic, beef, and pork
- Cook until meat is no longer pink
- Combine meat mixture and remaining ingredients in slow cooker
- Cover and cook on low 4 to 6 hours or until potatoes are soft
- Yield: 8 servings
- Per serving: 422 g water; 414 calories (42% from fat, 20% from protein, 38% from carb)
