Chili Verde Slow Cooker Recipe

Ingredients

  • 2 tbsps (28 ml) olive oil
  • 1 cup (160 g) diced onion
  • 1 tsp minced garlic
  • 1 pound (455 g) extra-lean ground beef
  • ½ pound (225 g) ground pork
  • 700 ml low-salt chicken broth
  • 475 ml water
  • 225g diced green chilies
  • 2 large potatoes, diced
  • 280g frozen corn
  • 1 tsp black pepper
  • ½ teaspoon oregano
  • 1 tsp cumin

Method

  1. Heat oil in a skillet over medium-high heat and then brown onion, garlic, beef, and pork
  2. Cook until meat is no longer pink
  3. Combine meat mixture and remaining ingredients in slow cooker
  4. Cover and cook on low 4 to 6 hours or until potatoes are soft
  5. Yield: 8 servings
  6. Per serving: 422 g water; 414 calories (42% from fat, 20% from protein, 38% from carb)
