Ingredients
- 1 pound (455 g) pinto beans
- 1 cup (160 g) sliced onion
- 1 tbsp (13 g) sugar
- 1 tsp garlic powder
- 1 tsp chili powder
- 360 g no-salt-added diced tomatoes, smashed
- 115g green chilies
- 6 slices low-salt bacon
- 1 pound (455 g) lean ground beef
Method
- Wash beans
- Put beans in large pan and cover with water
- Bring to a boil and boil for 10 minutes
- Cover and simmer for 30 minutes
- Turn off heat and let set for 1½ hours
- In slow cooker, mix onion, sugar, garlic powder, chili powder, tomatoes, green chilies, and bacon
- Drain beans and add to tomato mixture in slow cooker
- Cook on high 5 to 6 hours or until beans are done
- Before serving, brown ground beef and add to beans
- Yield: 8 servings
- Per serving: 131 g water; 386 calories (30% from fat, 26% from protein, 44% from carb)
Serve over rice or with corn bread
