Chickpea Coconut Quinoa Curry Indian Recipe

Ingredients

  • Serves: 8
  • 3 cups sweet potato, peeled and cut into cubes
  • 2 cups broccoli florets
  • 14.5 oz can coconut milk
  • 1/4 cup quinoa
  • 2 garlic cloves, minced
  • 1 tbsp ginger, grated
  • 1 cup onion, diced
  • 15 oz can chickpeas, drained and rinsed
  • 28 oz can tomatoes, diced
  • 1 tsp ground turmeric
  • 2 tsp tamari
  • 1 tsp chili flakes

Method

  1. Add all ingredients into the slow cooker and stir well.
  2. Cover and cook on high for 4 hours.
  3. Serve and enjoy.
