Chicken With Mushroom Marsala Sauce Recipe

Ingredients

  • Serving Size : 4
  • 4 (6 ounce) boneless skinless chicken
  • breast halves
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/4 cup flour
  • 4 tablespoons olive oil – divided
  • 1 pound (about 6 cups) small mushrooms sliced
  • 1/2 cup chopped onion
  • 1 cup Marsala or other red wine
  • 1 cup chicken broth

Method

  1. Season chicken breasts with salt and pepper.
  2. Lightly coat both sides of chicken with flour.
  3. In a large skillet, heat 2 tablespoons of the olive oil over medium-high heat.
  4. Add chicken; cook until golden, about 2 minutes on each side.
  5. Transfer to a plate.
  6. Reduce heat to medium.
  7. Add remaining 2 tablespoons oil to skillet; add mushrooms and onion; cook and stir until tender, about 7 minutes.
  8. Stir in Marsala and chicken broth.
  9. Return chicken breasts to the pan; simmer, covered, until no pink remains in the center.
