Chicken Vegetable Soup With Noodles Slow Cooker Recipe
Ingredients
- 320 g chopped onion
- 260 g sliced carrots
- 200 g sliced celery
- 280g frozen peas
- ¼ teaspoon black pepper
- ½ teaspoon basil
- ¼ teaspoon thyme
- 2 tbsps (2.6 g) parsley
- 475 ml water
- 3 pounds (1.3 kg) chicken, cut-up
- 1 cup (160 g) uncooked egg noodles
Method
- Place all ingredients in slow cooker except chicken and noodles
- Remove skin and any fat from chicken pieces
- Then place chicken in cooker on top of the rest of the ingredients
- Cover and cook on high 4 to 6 hours
- One hour before serving, remove chicken
- Cool slightly
- Cut meat from bones
- Return meat to cooker and add noodles
- Cover and cook on high 1 hour
- Yield: 6 servings
- Per serving: 421 g water; 382 calories (18% from fat, 57% from protein, 25% from carb)
