Ingredients
- 1 cup (160 g) chopped onion
- 1½ teaspoons minced garlic
- 1 cup (150 g) diced green bell pepper
- 1 cup (100 g) sliced okra
- 360 g chopped tomatoes
- 950 ml low-salt chicken broth
- 1 pound 455 g boneless skinless chicken breast, cut into 1-inch 2 5 cm pieces
- 2 teaspoons Cajun seasoning
Method
- Combine all ingredients in slow cooker
- Cover and cook on low 8 to 10 hours or on high 3 to 4 hours
- Serve over rice
- Yield: 6 servings
- Per serving: 323 g water; 122 calories (11% from fat, 64% from protein, 25% from carb)
