Chicken Fajita Wraps Recipe

Ingredients

  • RICE
  • 1 cup long grain rice
  • 2 cups chicken stock
  • 1/2 cup frozen peas
  • 1 small fresh carrot – diced
  • 2 fresh green onions – diced
  • 2 fresh garlic cloves – diced
  • 1 teaspoon salt
  • 1/2 teaspoon white pepper
  • 1 fresh tomato – diced
  • 1 fresh jalapeno – minced
  • CALAVACITAS
  • 2 fresh yellow squash
  • 2 fresh zucchini
  • 1 cup frozen corn
  • 1/2 stick butter or margarine
  • CHICKEN FAJITAS
  • 1 1/2 pounds chicken tenderloins – diced
  • 10 ounces white wine Worcestershire sauce
  • WRAPS
  • 1 dozen 10 inch flour tortillas
  • 1 cup white cheddar cheese – shredded
  • 1 avocado – diced

Method

  1. Add carrots, onions, peas, garlic, tomatoes and jalapenos to chicken stock.
  2. Add salt and pepper.
  3. Bring to a boil.
  4. Add rice.
  5. Cook on low heat for 20-25 minutes or until rice is done.
  6. Cover and set aside.
  7. Dice zucchini and yellow squash into small quarters.
  8. Stir fry squash and corn with butter or margarine until slightly tender.
  9. Cover and set aside.
  10. Stir fry chicken with butter or margarine.
  11. Add salt and pepper if desired.
  12. Heat up lightly oiled grill or large skillet.
  13. Lay tortilla on the skillet and add 1 ounce of cheese and spread evenly.
  14. Add 3 ounces of rice and spread evenly.
  15. Add 3 ounces of chicken to the center of the tortilla.
  16. Cook until tortilla is lightly brown.
  17. Add 1 teaspoon of avocado, 2 tablespoons of calavacitas and roll like a burrito.
  18. Yield: 12 Wraps
