Mediterranean Crock Pot Rice Paella Slow Cooker

Ingredients

  • 1½ cups of the long grain brown rice ½ lb. sausage
  • 1 onion
  • 1 green pepper
  • 4 garlic cloves, crushed
  • 1½ lbs. of chicken (boneless skinless chicken breast)
  • 1 lbs. of medium shrimp
  • 1 can of Rotel tomatoes
  • ½ tsp of Turmeric
  • ¼ tsp of Paprika
  • 1½ cup of chicken broth
  • 2 tsp of salt
  • 1 bag of frozen peas

Method

  1. Place the sausages in a skillet and brown well
  2. Toss in all the ingredients into the crock pot excluding the shrimp
  3. Cook for 4-5 hours on low until the grains of rice are soft and tender ensuring not to overcook
  4. During the last 20 minutes of cooking add the shrimps and combine well
  5. Serve warm
