Ingredients
- 4 Cloves Garlic – Minced
- 1 Shallot – Finely Chopped
- 1 Leek – Cleaned, Trimmed, and Sliced
- 2 Ribs Celery – Diced
- 6 oz. Cremini Mushrooms – Sliced
- 1 Medium Sweet Onion – Thinly Sliced
- 4 tbsp Butter – Divided
- 2 Cups Chicken Stock – Divided
- 1 lb. Boneless, Skinless Chicken Breasts
- 8 oz. Cream Cheese
- 1 Cup Heavy Cream
- 1 lb. Bacon – Cooked Crisp, and Crumbled
- 1 tsp salt
- 1 tsp pepper
- 1 tsp Garlic Powder
- 1 tsp Thyme
Method
- Place the shallot, garlic, leek, mushrooms, celery, onions, butter 2 tbsps , salt and pepper into the crock pot
- Pour about 1 cup of stock over the ingredients and mix well
- Place lid and cook the ingredients for 1 hour on low In the meantime, heat a skillet and melt the balance 2 tbsps of butter
- Place the chicken and brown on both sides for 5 minutes per side
- Transfer the browned chicken into a plate
- Pour the balance stock into the skillet and remove any chicken shreds left in the pan
- Add the stock into the crock pot along with the heavy cream, garlic powder, cream cheese and thyme
- Continue to stir until the cream cheese is completely dissolved and no pieces seen in the mixture
- Shred the chicken and place in the crock pot
- Mix in the bacon and combine all ingredients together
- Place lid, cover and let the ingredients cook for about 6-8 hours on low
