Ingredients
- 2 tbsps (28 g) unsalted butter
- ½ cup (80 g) wild rice
- 1 4 L low-salt chicken broth
- ½ cup 80 g minced onions
- ½ cup (50 g) minced celery
- ½ pound (225 g) butternut squash, peeled, seeded, and cut in ½-inch (1 3 cm) cubes
- 3 cups (420 g) chopped cooked chicken
Method
- Melt butter in small skillet
- Add rice and saute for 10 minutes over low heat
- Transfer to slow cooker
- Add all remaining ingredients except chicken to cooker
- Cover and cook on low 4 to 6 hours
- One hour before serving, stir in chicken
- Per serving: 260 g water; 154 calories (30% from fat, 39% from protein, 32% from carb)
