Chicken And Dumplings Slow Cooker Recipe

Ingredients

For the Soup:

  • 560 g cubed cooked chicken
  • 1 4 L low-salt chicken broth
  • 1 tablespoon 4 g fresh parsley
  • 1 cup (160 g) chopped onion
  • 1 cup (100 g) chopped celery
  • 2-3 potatoes, diced
  • 340g frozen green beans
  • 1 cup (130 g) sliced carrots

For the Dumplings:

  • 250 g flour
  • 4 tsps (18 g) baking powder
  • ¼ cup (60 ml) egg substitute
  • 1 tbsp (15 ml) olive oil
  • ½ cup (120 ml) skim milk

Method

  1. To make the soup: Combine all soup ingredients in slow cooker
  2. Cover and cook on low 4 to 6 hours
  3. Transfer to a large soup kettle with lid
  4. Bring to a boil and then reduce heat to simmer
  5. To make the dumplings: Combine flour and baking powder in a large bowl
  6. In a separate bowl, combine egg substitute, olive oil, and milk until smooth
  7. Add to flour mixture and stir until combined
  8. Drop by large tablespoons on top of simmering broth
  9. Cover and simmer without lifting the lid for 18 minutes
  10. Yield: 8 servings
  11. Per serving: 550 g water; 441 calories (10% from fat, 22% from protein, 68% from carb)
