Keto Easy Vegan Chia Pudding

Ingredients

Yield: 1 serving

  • ¾ cup (180 ml) unsweetened coconut milk or other nondairy milk of choice
  • 3 tablespoons (30g) chia seeds
  • ¼ teaspoon vanilla extract
  • 8 to 10 drops liquid stevia (optional)

Suggested Toppings.

  • berries
  • unsweetened coconut flakes

Method

  1. Put all the ingredients in a jar that holds at least 8 fluid ounces (240 ml)
  2. Secure the lid tightly and shake until well combined
  3. Let the mixture sit for 10 minutes, until the chia seeds have absorbed almost all of the coconut milk
  4. Stir to break up any clumps, top with berries or coconut flakes, if desired, and enjoy
  5. Refrigerate in a tightly sealed jar for up to 3 days
