Ingredients
CRUST:
- 2 cups graham cracker crumbs
- 1/2 stick butter
- 1 heaped tablespoon sweetened chestnut puree
- 2 cups cream cheese
- 3/4 cup sugar
- 3 whole eggs
- 3 egg yolks
- 3/4 cup sour cream
- 1 teaspoon lime juice
- 1 teaspoon vanilla extract
- 1 1/2 tablespoons rum
- 1 cup sweetened chestnut puree
SYRUP:
- 1/3 cup water
- 1/4 cup rum
- 1 tablespoon sweetened chestnut puree
- 1/4 cup sugar
- 1 tablespoon butter
Method
- Preheat oven to 350F
- In a medium bowl, combine graham cracker crumbs, chestnut puree and butter
- Press into the bottom of a greased 9 inch springform pan
- Chill for 30 minutes
- In a large mixing bowl, beat together cream cheese and sugar until smooth
- Add in whole eggs and yolks, one at a time until just combined
- Beat in sour cream, lime juice, vanilla and rum until creamy
- Fold in chestnut puree
- Place cheesecake pan in a baking pan filled with 1 inch of water
- Cook for 60 minutes, until center is almost set
- Cool, cover and chill overnight
- In a small saucepan, bring all syrup ingredients to a boil for 10 minutes, stirring frequently
- Cool and drizzle over cheesecake
