Chestnut Cheesecake Recipe

Ingredients

CRUST:

  • 2 cups graham cracker crumbs
  • 1/2 stick butter
  • 1 heaped tablespoon sweetened chestnut puree
  • 2 cups cream cheese
  • 3/4 cup sugar
  • 3 whole eggs
  • 3 egg yolks
  • 3/4 cup sour cream
  • 1 teaspoon lime juice
  • 1 teaspoon vanilla extract
  • 1 1/2 tablespoons rum
  • 1 cup sweetened chestnut puree

SYRUP:

  • 1/3 cup water
  • 1/4 cup rum
  • 1 tablespoon sweetened chestnut puree
  • 1/4 cup sugar
  • 1 tablespoon butter

Method

  1. Preheat oven to 350F
  2. In a medium bowl, combine graham cracker crumbs, chestnut puree and butter
  3. Press into the bottom of a greased 9 inch springform pan
  4. Chill for 30 minutes
  5. In a large mixing bowl, beat together cream cheese and sugar until smooth
  6. Add in whole eggs and yolks, one at a time until just combined
  7. Beat in sour cream, lime juice, vanilla and rum until creamy
  8. Fold in chestnut puree
  9. Place cheesecake pan in a baking pan filled with 1 inch of water
  10. Cook for 60 minutes, until center is almost set
  11. Cool, cover and chill overnight
  12. In a small saucepan, bring all syrup ingredients to a boil for 10 minutes, stirring frequently
  13. Cool and drizzle over cheesecake
