Cherry Cheesecake Topping Recipe

Ingredients

  • 2/3 cup tawny port or other sweet red wine
  • 1/2 cup sugar
  • 2 (10-ounce) bags frozen, pitted, dark sweet cherries
  • 2 tablespoons fresh lemon juice
  • 4 teaspoons cornstarch
  • 4 teaspoons water
  • 1 vanilla bean, seeds scraped out

Method

  1. In a large saucepan, bring port, sugar, cherries and vanilla bean pod (no seeds)
  2. Cook for 5 minutes, until cherries are thawed and mixture is syrupy
  3. Discard vanilla bean pod
  4. In a small bowl, whisk together lemon juice, cornstarch and water
  5. Stir into cherry mixture
  6. Return to a boil, then reduce heat and simmer for 3 minutes, until thickened and shiny
  7. Cool, cover and chill for 2 hours
