Turkey Cheeseburger Soup Slow Cooker

Ingredients

  • 1 pound (455 g) ground turkey
  • 1 cup (160 g) chopped onion
  • ½ cup (75 g) chopped green bell pepper
  • ½ cup (50 g) chopped celery
  • 700 ml low-salt beef broth
  • 1 cup 235 ml skim milk
  • 475 ml water
  • 2 tbsps (15 g) flour
  • 225g Cheddar cheese, shredded

Method

  1. Brown turkey in nonstick skillet
  2. Spoon into slow cooker
  3. Add onion, green pepper, and celery to slow cooker
  4. Heat broth, milk, and water in skillet, scraping up browned bits
  5. Sprinkle flour over liquid
  6. Stir until smooth and let boil for 3 minutes
  7. Pour into slow cooker
  8. Cover and cook on low 6 hours
  9. Then add cheese and cook another 2 to 3 hours
  10. Yield: 6 servings
  11. Per serving: 339 g water; 330 calories (46% from fat, 44% from protein, 10% from carb)
