Ingredients
- makes 1 cup
- 3/4 cup green cardamom pods
- 5 (2-inch) cinnamon sticks or 2 tablespoons ground cinnamon 1/4 cup cloves
- 2 tablespoons black pepper corns
- 2 to 3 tablespoons ground ginger
- 1/2 teaspoon fennel seeds (optional)
Method
- Combine all the ingredients in a spice grinder and grind to a powder
- Transfer to an airtight container and store for up to 6 months
