Ingredients
- 400 g diced cauliflower
- 475 ml water
- 225g fat-free cream cheese
- ½ cup (60 g) shredded Cheddar
- ½ cup (30 g) potato flakes
Method
- Combine cauliflower and water in a saucepan
- Heat to boiling
- Places cheeses in slow cooker
- Stir in cauliflower and water
- Mix well
- Stir in potato flakes and cook on low for 2 to 3 hours
- Yield: 6 servings
- Per serving: 184 g water; 168 calories (56% from fat, 20% from protein, 24% from carb)
