Ingredients

- 1 teaspoon safflower or coconut oil
- 1/2 teaspoon black mustard seeds
- 1 teaspoon black gram or petite yellow lentils, rinsed and drained 1 (2-inch) cinnamon stick
- 1/2 cup finely chopped red onion
- 2 medium tomatoes, chopped (1 1/2 cups)
- 1/2 teaspoon ground turmeric
- 1/2 to 3/4 teaspoon cayenne
- 3/4 teaspoon salt
- 2 1/2 cups small cauliflower florets
- 1 cup chopped carrots
- 1/2 cup water
- 1 tablespoon shredded coconut, dry or fresh
- ground black pepper
- 2 tablespoons chopped fresh cilantro, for garnish
- 1 tablespoon shredded coconut, for garnish
Method
- Heat the oil in a large skillet over medium heat
- When hot, add the mustard seeds and cook until they start to pop, about 30 seconds
- Add the lentils and cinnamon stick, and cook until the lentils are golden, about 1 minute
- Add the onion and cook for 5 minutes
- Add the tomato, turmeric, cayenne, and salt
- Mix well and cook until the tomato is saucy, 7 to 8 minutes
- Mash the larger tomato pieces
- Add the cauliflower, carrots, water, coconut flakes, and a good dash of black pepper
- Mix to coat
- Cover and cook over medium heat until the cauliflower is tender, 15 to 20 minutes, stirring once halfway through
- Cook uncovered for a few minutes if the sauce is too thin
- Garnish with cilantro or coconut and serve hot
- Discard the cinnamon stick just before serving
