Ingredients
Makes 4 servings
- 1 pound carrots, cut diagonally into 1/4-inch slices
- 1 pound parsnips, cut diagonally into 1/2-inch slices
- 1 tablespoon olive oil
- 1 Granny Smith apple, peeled, cored and cut into 1/2-inch dice
- 1 teaspoon pure maple syrup
- 1 tablespoon fresh lemon juice
- 1/8 teaspoon ground nutmeg
- salt and freshly ground black pepper
Method
- Steam the carrots and parsnips until just tender, about 5 minutes
- Set aside
- In a large skillet, heat the oil over medium heat
- Add the apple, maple syrup, lemon juice and nutmeg
- Cover and cook until the apple is softened, about 4 minutes
- Add the steamed carrots and parsnips and season with salt and pepper to taste
- Stir gently to mix well and heat through
- Serve immediately
