Ingredients

- 2 pounds carrots – sliced
- 1 medium onion – chopped
- 1 medium green pepper – chopped
- 1 cup sugar
- 1 teaspoon salt
- 1 teaspoon dry mustard
- 1 teaspoon black pepper
- 1/2 cup corn oil
- 3/4 cup white vinegar
- 1 teaspoon worcestershire sauce
- 1 can (8 oz) tomato sauce
Method
- Salt carrots and cook until done; set aside.
- Chop onion and green pepper and set aside.
- Mix sugar, salt, dry mustard and pepper; stir well.
- Add corn oil, vinegar, worcestershire sauce and tomato sauce; mix well.
- Combine carrots, onions and peppers.
- Pour liquid mixture over relish and marinate overnight.
