Carrot Pudding Slow Cooker Recipe

Ingredients

  • 1¼ cups (156 g) flour
  • 1 tsp baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon cinnamon
  • ½ teaspoon ground nutmeg
  • ½ cup (120 ml) egg substitute
  • ¾ cup (170 g) packed brown sugar
  • ½ cup (112 g) unsalted butter
  • 1 cup (130 g) sliced carrots
  • 1 apple, peeled, cored, and cut in eighths
  • 1 medium potato, peeled and cut in pieces
  • ¾ cup (110 g) raisins

Method

  1. Stir together flour, baking powder, baking soda, cinnamon, and nutmeg
  2. Place egg substitute, brown sugar, and butter in blender
  3. Cover and blend until smooth
  4. Add carrot to blender mixture; blend until chopped
  5. Add apple; blend until chopped
  6. Add potato; blend until finely chopped
  7. Stir carrot mixture and raisins into dry ingredients; mix well
  8. Turn into greased and floured 6-cup (1
  9. 4 L) mold; cover tightly with foil
  10. Place in slow cooker
  11. Cover and cook on high for 4 hours
  12. Remove from cooker
  13. Cool 10 minutes; unmold
  14. Yield: 8 servings
  15. Per serving: 77 g water; 359 calories (30% from fat, 6% from protein, 64% from carb)
