Ingredients
Makes about 1 cup
- 2 medium carrots, shredded
- 2 tablespoons chopped fresh ginger
- 3 tablespoons rice wine vinegar
- 3 tablespoons fresh orange juice
- 1 tablespoon soy sauce
- 1 tablespoon mirin
- 2 tablespoons grapeseed oil
Method
- In a blender or food processor, combine the carrots, ginger and vinegar and blend until smooth
- Add the orange juice, soy sauce, mirin and oil and blend until smooth
- Taste, adjusting seasonings if necessary and add a splash more orange juice if a thinner dressing is desired
- Store leftover dressing tightly covered in the refrigerator, where it will keep for 1 to 2 days
