Ingredients
Makes 1 loaf
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground allspice
- 1/2 teaspoon ground ginger
- 1/2 teaspoon salt
- 1 cup light brown sugar
- ¾ cup plain or vanilla soy milk
- 1/3 cup canola oil
- 1 teaspoon pure vanilla extract
- 1 1/4 cups finely shredded carrots
- 1/2 cup sweetened dried cranberries
- 1/2 cup chopped walnuts
Method
- Preheat the oven to 350°F
- Lightly oil a 9-inch loaf pan and set aside
- In a large bowl, mix the flour, baking powder, cinnamon, allspice, ginger and salt
- Set aside
- In a separate large bowl, combine the sugar, soy milk, oil and vanilla
- Add the carrots, cranberries and walnuts and mix until well combined
- Add the wet ingredients to the dry ingredients, stirring until just blended
- Scrape the batter into the prepared pan
- Bake until golden brown and a toothpick inserted into the center comes out clean, about 1 hour
- Cool at least 15 minutes before removing from the pan
- Cool on a wire rack for 30 minutes before slicing
