Ingredients

- 2 eggs – slightly beaten
- 1 1/2 cups canned pumpkin
- 1 cup sugar
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/4 teaspoon ginger
- 1/4 teaspoon cloves
- 1/4 teaspoon nutmeg
- 1 2/3 cups undiluted carnation evaporated milk
- 1 single (9″) crust unbaked pie shell
Method
- Combine eggs, pumpkin, sugar, salt and spices.
- Gradually add evaporated milk.
- Mix well.
- Pour into unbaked pie shell.
- Bake in hot oven (425 degrees) 15 minutes; reduce to moderate heat (375 degrees) and continue baking about 40 minutes, or until knife inserted near center of pie comes out clean.
- Cool before serving.
- Garnish if desired.
