Ingredients
Makes 4 servings
- 1 pound carrots, cut into 1/4-inch slices
- 2 tablespoons vegan margarine
- 1 tablespoon finely grated orange zest
- 1/2 teaspoon ground cardamom
- salt
- ground cayenne
Method
- Steam the carrots until tender, about 7 minutes
- Set aside
- In a large skillet, melt the margarine over medium heat
- Add the carrots, orange zest and cardamom and season with salt and cayenne to taste
- Cook, stirring occasionally, until flavors are blended, about 2 minutes
- Serve immediately
